The Morgan family have always been in the area of Volcán, Chiriquí, with a history going back several generations. They have owned this farm for 25 years and planted the first Geisha trees about 10 years ago. Processing is a critical element to the quality of coffee produced at Morgan Estate and extreme care is taken to ensure each lot meets the exacting standards of the farm. ‘Comet’ is a collaboration with Project Origin, aiming to push anaerobic fermentation in interesting directions to create intentional flavour profiles. This lot sees two stages of extended fermentation in oxygen-free environments, which encourage bold liquor and intense fruited notes without disrupting the integrity of the elegance and purity of the Geisha variety. This is an absolutely stunning lot that should not be missed!

The fermentation process of this lot has encouraged such a complex palate. Taking you on a layered journey from fresh green kiwifruits to mixed tropical fruits, eventually down into ripe apricot tones and boozy cognac-like qualities.
