About This Single Origin Ethiopian Espresso

This lot originates from Sidamo, Ethiopia, a renowned coffee region in the south-east of the country recognised for its incredibly complex and fruit forward flavour profiles. Unlike most in Ethiopia, this coffee is a single producer lot, created by Addisu Hulichaye; owner of the 8 hectare farm Gololcha.

This lot was produced with the support of the Lalisaa Project – a program aimed at allowing smallholder access to marketing and exporting their coffees outside of the ECX system. By participating in the program, smallholder coffee farmers and quality-focused coffee washing stations are able to access support and resources that will help them thrive. As a partner of the project, Addisu is able to advance through their 3 year program, which progress through three stages; pre-selection, acceleration and graduation. At each stage, they are assessed, and only advanced if they meet certain criteria. As they advance, farmers are assisted through knowledge workshops, expert agronomists, industry events, and management planning, all with the goal to improving yields and quality, and empower the individual smallholders.

In collaboration with Lalisaa Project, Addisu employs best practices to dry his natural processed coffees, a complex process requiring a high level of attention to detail in order to be done well. The cherry is hand-picked, weight graded and spread to dry on forty raised African beds to reach a ‘raisin’ stage (25% moisture) Once achieved, the layers of cherries are increased and turned with care to reach optimum moisture; usually across 2-4 weeks.
