In Guatemala, it is not common to process natural coffee; Guatemala specializes in washed coffee. We needed to learn in previous years to conduct many experiments. We have finally found a technology that allows us to process clean, bright, natural coffee. Our infrastructure is designed to process washed coffee, so we are adapting it to process larger volumes of natural coffee.
